AIR-FRIED, SPICY STUFFED ZUCCHINI WITH SAUSAGE or VEGAN SAUSAGE RECIPE

With summer here the gardens are just busting with zucchini and other fresh ingredients. Here is a yummy healthy recipe to keep your family happy.
2 medium zucchinis, slice lengthwise, scoop out center flesh and save
2 T. butter
1/2 cup onions
3 cloves garlic minced
1/2 c. tomato sauce
2 oz. mozzarella cheese, shredded or use fresh mozzarella
Fresh basil, chopped
14 ozs sausage. We used Lightlife Gimme Lean Veggie Sausage, 14 Ounce
Slice zucchini lengthwise and scoop out centers. Save
In a saute pan, saute the chopped zucchini centers in the butter. Add the panko, onion and garlic and saute until light brown.
Add sausage and pasta sauce
In a large sauce pan, add about 2 inches of water. Boil water and add the 4 pieces of zucchini and allow to boil for about 5 minutes until tender. Remove and drain.
Fill the zucchini boats with the mixture that was just cooked.
Top with mozzarella cheese and Parmesan
In your preheated air fryer, add the zucchinis, and cook at 390 degrees for 4-5 minutes til lightly browned.
Top with fresh basil, if desired
