Spicy Barbecue Split Whole Chicken


Ingredients:

  • 1 chicken halved / butterflied lengthwise

  • 1 5 oz jar of Habanero and Lime Hot Sauce

  • 1/4 cup BBQ Seasoning

  • 1 cup Homemade Barbecue Sauce

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon ground black pepper

Directions:

  1. Remove giblets and use kitchen sheers or boning knife to cut chicken down backbone through the ribs. This is called butterflying or spatchcocking. I use this technique to shorten grill time, while having a juicy, evenly cooked bird.

  2. Loosen skin from breast and drumsticks by inserting fingers, gently pushing between skin and meat. Rub spice mixture under skin. Apply BBQ sauce to skin and allow chicken to marinate in refrigerator overnight.

  3. Preheat grill to 450 degrees. Using one burner.

  4. Oil the grates prior to cooking chicken skin side down on the lit side of the grill for 4 minutes.

  5. Move to unlit side of grill

  6. Apply BBQ sauce

  7. Add weight to chicken like a foil wrapped brick or frying pan.

  8. Close grill and cook 35 - 40 minutes. Marinate every 7-10 mins.

  9. Remove weights, marinate both sides of chicken. Rotate chicken to sear # marks. Cook until internal temp reaches 165 degrees.

  10. Remove from grill and let rest for 10 minutes.
