SPICY, BUBBLY, SPINACH & CHEESE
This is a go to for our family. A simple on pot recipe that always is a good side to any meal. Can be cooked on stove top or on the grill.
Ingredients:
8 ozs frozen Spinach
3 cloves garlic minced
1 tbsb butter
2 slices Swiss cheese
2 slices Cheddar cheese
2 tbsps Hazel and Ash Curry Sauce

Directions:
1. In a small Dutch oven, mix garlic and oil and heat for 2 mins
2. Add remaining ingredients but the cheese
3. Simmer for 8-10 mins on a single lit burner on high
4. Stir 4 mins in
5. Add veggie dogs (See Veggie and Spring Radish Salad Recipe (TBD))
6. Move Dutch oven to indirect heat and simmer
7. Flip veggie dogs
8. Add cheddar cheese to Dutch oven and mix. Cover and simmer for 2 mins
10. Stir and top with Swiss cheese. Cover for 1 min
11. Remove cover and stir while watching closely
12. Pull off heat when all cheese is melted
13. Assemble plate: pita stuffed with mustard, radish salad, side of Spicy Bubbly Spinach and salad.
